Slow Cold Brew with Cinnamon

Cold brew is not iced coffee; it is a different extraction entirely, one that never meets heat and therefore never pulls out the sharp, ashy notes. It also keeps for a week, which makes it less a drink than a small piece of household infrastructure.

The Recipe

Ingredients

  • 200g coarse-ground coffee
  • 1 litre cold water
  • 1 cinnamon stick, snapped in half
  • 1 strip orange peel

Serves 6 · 1 days in total

Method

  1. 01

    Combine the coffee, water, cinnamon and orange peel in a large jar. Stir until every ground is wet — dry clumps will not extract.

    Cover and leave on the counter 12–16 hours, out of direct sun.

  3. 03

    Strain through a damp cloth, then once more through paper if you like it clean.

  4. 04

    Keep in the fridge for up to a week. Dilute to taste with water or milk over ice; it is a concentrate, not a cup.

A note from the kitchen

Snapping the cinnamon stick opens it up. A whole stick barely whispers.
