The six jars we never cook without

A well-stocked pantry is not a long shopping list — it is six things bought properly and kept well. This is ours, with the honest reason each one earns its shelf space.

The rule

If a jar has been open longer than three months, taste it before you trust it. Acidity climbs, aroma leaves, and a recipe can taste fine while the tin disagrees.

White miso

A spoonful turns a pan sauce, a dressing or a butter savoury without anyone guessing why.

Keep it
Fridge, up to a year. It does not spoil, it just darkens and gets saltier.

Miso butter for cabbage · stirred into risotto at the end · whisked into mayonnaise

Buttermilk powder

The acidity that makes cornbread tender, without half a carton going off in the door shelf.

Keep it
Cool cupboard, six months. Reconstitute with water when a batter calls for it.

Caster sugar, brown and white

Two sugars cover almost every sweet thing worth baking, and both keep indefinitely.

Keep it
Airtight tin. Keep a slice of bread in the brown to stop it setting.

Good vinegar

Red wine vinegar deglazed into a hot pan is the fastest sauce in the house.

Keep it
Dark cupboard, basically forever.

Under roast chicken · a teaspoon in bean soups · the dressing for any bitter leaf

Cannellini beans

Four minutes from tin to table, and their starch thickens whatever pot they join.

Keep it
Cupboard, two years. Drain and rinse before use.

Lemon and orzo · blended into a dip · thrown whole into a green stew

Flaky salt

The last thing on almost every plate here, because texture is half of seasoning.

Keep it
Somewhere dry, well away from the hob's steam.

Cookies ten minutes out of the oven · tomatoes · anything roasted and glossy
